This recipe goes back to when I was a child. I’m not sure where it came from, whether it was created off the top of my father’s head, or some type of recipe he had found years ago. I remember my father making it at least twice a month and everyone loves it.
Ingredients:
- 1 small black label ham
- 2 cans of black olives, sliced
- 2 jars of pimentos
- 2 lbs. of fettuccine
- 1/2 onion
- 6-8 eggs
- 1 cup of Parmesan cheese, grated
Instructions
- Dice the onion into small pieces
- Cut Black Label Ham into small square pieces
- In a skillet, saute onion with a coat of oil on medium heat
- When heated through, add ham. Cook it until the ham is hot
- Add pimentos and olives, along with the juice
- Lower the temperature to a low simmer
- Put water in a pot and bring to a boil
- Cook pasta al dente
- Scramble eggs and combine with cheese
- When cooked, drain pasta and put back into pot
- Add eggs and cheese to pasta
- Stir until eggs are cooked and it doesn’t look wet
This is one of my favorite meals. Granted, I’ll admit, I don’t eat the Ham. I still love it, though, and love when we cook it. This was my first time cooking it by myself and it was definitely a lot of work. But it’s totally worth it. I hope everyone likes it as much as I do!
